Spinach Paneer Pinwheels I love spinach and cottage cheese filling cooked in mild spices and love to fill it in sandwiches ,toasts,paratha and pinwheels.This is one versatile that can be used to stuff or top any dish.So this time I made these simple and filling pinwheels for our Christmas day breakfast and totally loved them.
I used store bought puff pastry sheet alternatively you may use the home made dough or basic pizza dough to make them more interesting.
INGREDIENTS OF Spinach Paneer Pinwheels :-
[a] = 1 frozen puff pastry sheet,thawed
[b]= 1 tablespoon plain flour for dusting.
[c]= 1 onion,chopped
[d]= 2-3 garlic cloves,minced
[e]= 2 green chillies,chopped
[f]= 1 tomato,chopped
[g] =200 g spinach leaves,chopped
[ h] = 150 g paneer/cottage cheese,crumbled
[i]= 1/2 teaspoon turmeric powder
[j]= 1 teaspoon coriander powder
[k]= Salt to taste
[l]= 1/2 teaspoon garam masala
[m]= 2 tablespoon olive oil plus more to brush the pinwheels
Heat olive oil in a pan.Add onion and garlic.Saute for a minute.
Now add green chili,tomato,salt,turmeric and coriander powder.Cook for a minute. Add chopped spinach,cook covered for 2 minutes.
Finally add crumbled paneer ,cook without lid for 5 minutes until all moisture evaporates.
Sprinkle garam masala and let the filling cool.Preheat oven to 180 degree C.
Sprinkle dry flour on work space and roll the puff pastry a little more lengthwise.
Spread the stuffing over the puff pastry sheet leaving an inch from the edges.
Start rolling from the short side all the way to the end.
Line a baking paper with parchment paper.
Cut into round slices.Lay the slices flat on baking sheet.Brush with olive oil
Method Of Preparation of Spinach Paneer Pinwheels :-
Thaw the puff pastry sheet for 40 minutes as per the instructions on the package.
Blanch spinach and drain excess water. Chop finely. If using frozen spinach, pulse it in a food processor. Crush Paneer, mixed nuts, and green chilies.
In a mixing bowl, add in the paneer crumble, pulsed spinach, salt, red chili powder, onion powder and garlic powder. Mix well and set aside.
Preheat the oven to 400 °F.
Line a baking tray with parchment paper.
Spread the puff pastry sheet on a clean, floured work space and roll it slightly to stretch it.
Spread the Pizza/Pasta Sauce evenly on the puff pastry sheet.
Spread the paneer-spinach mixture evenly all over the puff pastry sheet.
From one side tightly roll the sheet like a carpet or jelly roll.
Make 18 slices 1 centimeter apart and place the slices on the prepared baking tray.
Bake for 18-20 minutes or until they become golden brown.
Serve with any sauce or as is.
